Servings: 8 to 10 servings

Prep Time: 40minutes minutes

Cook Time: 50minutes minutes

Total Time: 1hour hour 30minutes minutes

Ingredients

  • 1 lb ziti noodles

  • 1½ lbs ground spicy or sweet Italian sausage (or removed from casings)

  • 4 cloves garlic, minced

  • 1 (28-oz) can crushed tomatoes

  • 1 teaspoon salt

  • 1½ teaspoons sugar

  • ¼ teaspoon crushed red pepper flakes

  • 1 cup heavy cream

  • ⅓ cup plus 3 tablespoons grated pecorino Romano (or Parmigiano Reggiano cheese), divided

  • ⅓ cup chopped fresh basil, plus more for serving

  • 8 oz whole milk mozzarella cheese, shredded (about 2 cups)

How to Cook the Pasta Perfectly

Start by bringing a large pot of salted water to a boil. Salt is essential here because it seasons the pasta from the inside out, enhancing the overall flavor of the dish. Add 1 pound of ziti pasta and cook it for about 7 minutes. The goal is to cook the pasta slightly under al dente since it will continue cooking in the oven. Overcooked pasta can become mushy after baking, so timing is key.

Once the pasta reaches the right texture, drain it well and return it to the pot. Keeping the pasta warm in the pot helps it absorb the sauce better when combined later.

How to Make the Rich Sausage Tomato Sauce

The sauce is the heart of baked ziti, and this recipe uses Italian sausage for a flavorful, meaty base. Heat a large pan over medium heat and add 1½ pounds of sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5 to 6 minutes. Remove the sausage from the pan and set it aside.

Leave about 1 tablespoon of the sausage fat in the pan. If there isn’t enough fat, add a splash of olive oil. This fat carries flavor and helps cook the garlic without burning it. Add 4 minced garlic cloves and sauté for 1 minute until fragrant.

Next, stir in a 28-ounce can of crushed tomatoes, 1 teaspoon of salt, 1½ teaspoons of sugar, and ¼ teaspoon of red pepper flakes. The sugar balances the acidity of the tomatoes, while the red pepper flakes add a subtle kick. Let the sauce simmer gently for 10 minutes to develop flavor.

After simmering, stir in 1 cup of heavy cream, ⅓ cup of pecorino Romano cheese, and ⅓ cup of fresh basil leaves. The cream adds richness and smoothness, while the cheese and basil bring depth and freshness. Return the cooked sausage to the sauce and mix everything well.

Combining Pasta and Sauce

Pour the sauce into the pot with the cooked pasta. Gently stir to combine, making sure every piece of pasta is coated with the creamy, savory sauce. This step ensures the flavors meld together before baking.

How to Assemble and Bake the Ziti

Preheat your oven to 375°F (190°C). Use a 9×13-inch baking dish for this recipe.

Start by spreading half of the pasta and sauce mixture evenly in the bottom of the dish. Sprinkle 1 cup of shredded mozzarella cheese over the pasta, followed by a light dusting of pecorino Romano cheese. The mozzarella melts beautifully, creating a gooey layer, while the pecorino adds a sharp, salty contrast.

Add the remaining pasta mixture on top, then finish with another layer of mozzarella and pecorino Romano cheese. This layering creates a cheesy crust that browns nicely in the oven.

Bake the dish for 20 to 25 minutes until the cheese is melted, bubbly, and golden brown around the edges. Let the baked ziti cool for a few minutes before serving to allow it to set slightly.

Tips for Success and Variations

  • Pasta choice: While ziti is traditional, penne or rigatoni work well too because their tubes hold sauce.

  • Sausage options: Use sweet or spicy Italian sausage depending on your heat preference. For a lighter version, ground turkey sausage is a good substitute.

  • Cheese swaps: If pecorino Romano is unavailable, Parmesan cheese is a fine alternative.

  • Make ahead: Assemble the dish a day before and refrigerate. Bake it straight from the fridge, adding a few extra minutes to the baking time.

  • Add veggies: For extra nutrition, stir in sautéed mushrooms, spinach, or bell peppers with the sauce.
